Chicken Enchiladas

                                                       








Ingredients

1-4 corn tortillas
2-1/2 cup shredded cooked chicken
3-1/2 cup black beans
4-1/2 cup sweet corn
5-1 cup medium salsa (or hot, whichever you prefer)
6-1 cup plain yogurt
7-1/2 cup sour cream
8-1/2 cup shredded Monterey Jack cheese

Preheat oven to 350 degrees. Coat our Anolon Sure Grip 9x13 pan with non-stick spray. Warm tortillas according to directions on package. Combine 1/2 of  the shredded  cheese with beans & corn. Fold in remaining ingredients. Divide mixture into the tortillas. Roll tortillas and place them seam down in pan. Sprinkle remaining cheese on top. Cover with foil and bake for 30 minutes.
